<image:caption>Eastern Red Cedar can either be mixed directly into the mash or laid at the bottom of your mash tun as a filter. This picture is an example of using way too much in an early brew, which was likely the cause of an overly sharp, pungent flavor. Use just a couple of small branches for a subtle flavor and increase carefully from there if you desire.</image:caption>

<image:caption>My latest beer showcase at Porchdrinking.com! It’s not every day you get to interview the writer of some of your favorite shows (The Simpsons, Futurama, Disenchanted, etc. Bill Oakley is also a celebrated food influencer of “everyday food” who has amassed a huge following on Instagram and Twitter. He also runs the Portland- (and Internet-) based Steamed Hams Society & Food Discovery Club. Oh, and check out my profile on the Steamed Hams Lager he collaborated with Portland’s Level Beer for a Memorial Day 2023 release. He and the Level Crew had to taste test a lot of beer and burgers to decide on the best recipe for combing with a delicious hamburger … ergh, steamed ham. If you’re not familiar with steamed hams, where have you been? Check out this short clip. If you’re from the same generation as I am, you’ll remember.</image:caption>
